稻荷豆皮壽司
食材(約一到兩人份)
壽司飯
熱白飯 680g,約2杯生米
日本米醋 70ml
細砂糖 2大匙
鹽 2小撮
罐頭豆皮 約10~12片
作法
1.製作壽司飯。米醋、糖與鹽混合成壽司醋,趁米飯還有熱度的時候舀入壽司木盆(可用一般容器取代)中,將壽司醋以繞圈的方式淋在米飯上,用飯勺翻拌均勻,接著用電風扇或扇子一邊吹涼米飯,一邊用飯勺從米飯底部翻起來散熱。壽司飯確實冷卻後蓋上一塊擰乾的濕布備用。
2. 製作豆皮壽司。盛一碗飲用水將雙手稍微沾溼,取一小團米飯輕輕捏握成橄欖狀,放入豆皮中即可。
